The most common form of food borne illness comes from E. Coli 0:157. As with any illness, children, the elderly, and the immune-compromised are the most at risk for contracting food poisoning. Symptoms of this strain of E. Coli generally involve bloody diarrhea, abdominal cramping, and a high fever. Most of those infected do not report experiencing the symptoms until three to four days after coming in contact with the toxin. In 10-15 percent of these cases, a deadly condition that impairs renal function can occur. Those affected by this condition will require dialysis, and in more serious cases, a kidney transplant.

Other food borne illnesses include food borne Botulism and Salmonella, which also cause diarrhea, fever, and abdominal cramps. These symptoms generally occur within a 12-hour to 3-day period after exposure. In some cases, the illness can spread from the intestines to the blood stream often requiring hospitalization and sometimes resulting in severe injury or death.

Food allergies can also be the cause of serious problems. Deadly reactions can occur when a product is mislabeled. For example, a product may be labeled as peanut-free, but in actuality is not. This would result in a recall of the product by the company, but often times, people are negatively affected by the mislabeling.

Tips to Keep Your Food Safe

  • Cook Thoroughly: This applies to meat, poultry and eggs. For example, eggs should be cooked until the yolk is firm.
  • Separate Foods: Put cooked foods on a clean platter, and wash utensils and cutting boards that have been in contact with raw food.
  • Wash Your Hands!
  • Refrigerate: Put leftovers in the refrigerator as bacteria can grow quickly at room temperature.
  • Wash Produce: Clean all vegetables and fruits and remove the outermost leaves.
  • Check the Label!
